Tzatziki Sauce

Yield: 6 servings


1 cucumber
1 cup of Greek yogurt, plain
1 tbsp lemon juice
1 tbsp olive oil
2 cloves of garlic, minced
Salt and pepper to taste


  1. Grate the cucumber onto paper towel.
  2. Squeeze to extract all the water out of the cucumber and discard the water. Put the grated cucumber into a bowl and add the remaining ingredients.
  3. Refrigerate until needed. This should be kept only 1-2 days in the fridge.
